Moringa Scrambled Eggs on Toast

Ingredients

  • 2 large eggs
  • 1 teaspoon moringa powder
  • 2 tablespoons milk (or plant-based milk)
  • 1 tablespoon butter or olive oil
  • 1 slice wholegrain or sourdough bread
  • Salt and pepper to taste
  • Optional toppings: sliced avocado, chili flakes, feta cheese

Instructions

  1. Toast the bread to your liking and set aside.
  2. In a small bowl, whisk together the eggs, milk, moringa powder, salt, and pepper until combined.
  3. Heat butter or oil in a non-stick pan over medium heat. Pour in the egg mixture.
  4. Gently stir with a spatula, pushing the eggs from the edges to the center until just cooked and still soft.
  5. Pile the scrambled eggs onto the toasted bread. Add any toppings you like and serve immediately.
